Yes, a thermometer measures temperature. You really need to be sure the wine is at the correct temperature, otherwise it will not develop properly. We looked at the stick-in temperatures, but then every time we wanted to see how the wine was doing, we'd have to open it up and find out. This way, with a stick-on thermometer, we can easily look at it every time we pass the carboy and see that it's still doing well.
