These little rubber items connect on the necks of the bottles you use, allowing the plastic tubes to connect securely. It also lets the air lock be attached at the top of the fermentation vessel. Get something sturdy that fits well so the air doesn't leak in!

You can also get a cap with two holes specifically designed for transferring liquids. You put the racking cane in one hole and apply pressure to the other. They're usually bright orange. These are really handy for starting siphons.
