Day 1 - In the Beginning ...

In goes Packet 1. Mix it up well, swirling it around to dissolve it.

DaveR, my expert winemaker, says that Packet 1 is typically Yeast nutrient (ammonium sulphate or phosphate) or Dead yeast (used as yeast nutrient...they're cannibals!). In this case it's Bentonite, which is a clarifier. Adding it early allows it to work for longer, and also does provide some assistance with fermentation.
